Banana and Pear Muffins

Ingredients:
2 ripe bananas
1 1/2 cup plain flour
1 tsp baking soda
1/4 tsp salt
1/2 cup brown sugar
2 eggs
3 tbsp oil
1 tsp vanilla essence
1 pear, chopped
Preparation:
- Preheat the oven to 180 degree celcius. Line a 12 hole cupcake tin with paper cases.
- Sift together plain flour, baking soda and salt in a bowl and keep it aside.
- In a large bowl, add bananas and mash well with a fork.
- Then add brown sugar, eggs, oil and vanilla essence and mix well using a spatula / whisk.
- Add the sifted flour and stir just until the batter starts coming together.
- Add the chopped pear and stir just until combined. Do not overmix.
- Divide the batter between the paper cases and then bake for 20-25 minutes until golden and a toothpick inserted comes out clean.
- Transfer the muffins to a wire rack and leave to cool completely...
- You can also add 1/4-1/2 cup chopped walnuts or any other nuts for this recipe...
