Ingredients:

2 ripe bananas

1 1/2 cup plain flour

1 tsp baking soda

1/4 tsp salt

1/2 cup brown sugar

2 eggs

3 tbsp oil

1 tsp vanilla essence

1 pear, chopped

Preparation:

  1. Preheat the oven to 180 degree celcius. Line a 12 hole cupcake tin with paper cases.
  2. Sift together plain flour, baking soda and salt in a bowl and keep it aside.
  3. In a large bowl, add bananas and mash well with a fork.
  4. Then add brown sugar, eggs, oil and vanilla essence and mix well using a spatula / whisk.
  5. Add the sifted flour and stir just until the batter starts coming together.
  6. Add the chopped pear and stir just until combined. Do not overmix.
  7. Divide the batter between the paper cases and then bake for 20-25 minutes until golden and a toothpick inserted comes out clean.
  8. Transfer the muffins to a wire rack and leave to cool completely...
  • You can also add 1/4-1/2 cup chopped walnuts or any other nuts for this recipe...
