Banana Biscoff Muffins

Ingredients:
1 1/2 cup plain flour
1 tsp baking powder
1/2 tsp salt
2 ripe bananas, mashed
1/4 cup oil
1/2 cup milk
2 eggs
1/2 cup sugar
1/4 cup brown sugar
1 tsp vanilla essence
1/4 cup biscoff spread
biscoff biscuit crumbs, for topping
Preparation:
- Preheat the oven to 180 degree celcius. Line a 12 hole muffin tin with paper cases.
- In a bowl, whisk together plain flour, baking powder and salt and keep it aside
- In a large mixing bowl, add oil, milk and eggs and whisk well.
- Add sugar, brown sugar and vanilla essence and mix until well combined.
- Add mashed bananas and slightly warm biscoff spread and mix well.
- Then add flour mixture and stir with a spatula, until just combined.
- Divide the batter evenly into the prepared muffin tin and sprinkle biscoff biscuit crumbs on top.
- Bake it in the preheated oven for about 20-22 minutes or until the muffins are golden brown and a toothpick inserted comes out clean.
- Transfer the muffins to a wire rack and leave to cool completely...
