Banana - Cinnamon Muffins

Ingredients:
1 2/3 cup plain flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
2/3 cup sugar
1/2 cup oil
2 large eggs
1 tsp vanilla essence
2 small ripe bananas, mashed
For Cinnamon-sugar:
1/4 cup sugar
1/2 tsp ground cinnamon
1/4 cup melted butter
Preparation:
- Preheat oven to 180 degree celcius. Grease a 12- hole cupcake /muffin tin with baking spray or line the muffin tin with paper liners and keep it aside.
- In a bowl, whisk together plain flour, baking powder, baking soda, salt and ground cinnamon and keep it aside.
- In another large bowl, whisk together sugar, oil, eggs and vanilla essence.
- Then add the mashed banana and mix well. Add the flour mixture and stir until just combined.
- Divide the batter evenly into the prepared muffin tin and bake for 18-22 minutes until golden or until a skewer inserted comes out clean.
- In a small bowl, mix 1/4 cup sugar and 1/2 tsp ground cinnamon. Dip each muffin tops into melted butter and then into cinnamon-sugar and then serve....
