Banana / Pazham Adukku

Ingredients:

For Batter:

5 eggs

3 tbsp sugar

1/2 tsp cardamom powder

1/2 tsp salt

1 cup plain flour

1 cup milk

For Filling:

1 tbsp ghee

2 ripe plantains / kerala bananas / nendrapazham, finely chopped

4 tbsp sugar (or as required)

3/4 cup grated coconut

few raisins

few cashew nuts, chopped

ghee, for brushing the pan

Preparation:

  1. In a blender, add eggs and blend well adding 3 tbsp sugar and cardamom powder.
  2. Then add plain flour, milk and salt to this and blend again until smooth. Transfer to a bowl and keep it aside.
  3. Heat ghee in a pan and add chopped plantain and saute till soft adding 2 tbsp sugar and keep it aside.
  4. In the same pan, add the grated coconut and 2 tbsp sugar and saute well at low flame till the sugar melts completely.
  5. Add the roasted plantain into this and mix well until well combined.
  6. Add raisins and chopped nuts and mix well. Transfer this filling to a bowl and keep it aside.

7. Heat a frying pan / dosa tawa on medium-low flame and apply / brush some ghee evenly. Pour a ladleful of batter and rotate the pan to spread the batter.

8. Place some banana filling on one side and after few seconds fold it through the mid line and press the edges to attach both layers.

9. Now apply little ghee on the empty half side of the pan and pour the batter in that empty side with close contact to the middle of first layers and sides. (They should be joined in the middle).

10. Then place the filling on that side and fold the first layer over the second layer ( ie, cover with the other side ) and press well at the ends using spatula. Do not leave the edges open, pour few drops of batter along the sides to close the edges.

11. Now repeat the same process on the empty side of the pan.

12. Apply ghee and pour batter and rotate the pan to spread the batter in the sides and the middle to stick together. Place the filling and cover with the other side and press well at the ends with spatula.

13. When cooked well on both sides, remove from the pan and transfer to a plate. I prepared another adukku with the remaining batter and filling...

14. Once cooled, cut it into pieces and serve…

  • You can make many layers in one adukku, but it will be hard to flip and sometimes will break while flipping.
