Ingredients:
3/4 kg beef, cut into pieces
3 cups sella basmati rice
1 large onion, slice
1 tbsp ginger-garlic paste
1 capsicum, chopped
1 big tomato
1 1/2 tsp arabic masala
1/2 tsp garam masala
1 tsp pepper powder
1 tbsp tomato paste
2 green chillies
1 bay leaf
1 cinnamon piece
3-4 cardamoms
4 cloves
1 dried lemon
salt to taste
2 tbsp oil
Preparation:
- Wash the sella basmati rice and soak in water for 30-45 minutes.
- Grind the tomato into puree and keep it aside.
- Heat 2 tbsp oil in a pressure cooker and add bay leaf, cinnamon, cloves, cardamoms and dried lemon and saute for few seconds.
- Add sliced onion and saute until light golden.
- Add ginger-garlic paste and saute till the raw smell goes.
- Add chopped capsicum and mix well.
- Add tomato puree and mix well and cook for 2-3 minutes till raw smell goes.
- Add arabic masala, garam masala, pepper powder, salt and tomato paste and mix well.
- Add cleaned beef pieces and mix well for 4-5 minutes.
- Add 1 cup water, mix well and pressure cook till done.
- Once the pressure releases, open the cooker and transfer the beef pieces into a bowl using a slotted spoon.
- Then measure the stock inside the cooker and add remaining quantity of water to make 4 1/2 cups.
- In the same cooker, add drained basmati rice and stock water and mix well. Adjust the salt.
- Add cooked beef and green chillies and pressure cook for 1 whistle and switch off the flame, Keep it aside for 10-15 minutes.
- Open the pressure cooker and then transfer to a large serving plate. Serve with salata hara, dakkous, salad etc…
