Ingredients:
350-400 gm boneless chicken, cut into small pieces
1 big onion, sliced
1 beetroot, peeled and sliced
1 big tomato, chopped
7-8 garlic cloves
8-10 cashew nuts
1 tbsp + 1 tbsp kashmiri chilli powder
1 1/2 tsp turmeric powder
salt to taste
1 tsp cumin powder
1 tbsp kasuri methi, crushed
1/2 cup fresh cream
4-5 tbsp butter
1 tbsp oil
1 tbsp coriander leaves, chopped
Preparation:
- Heat 2-3 tbsp butter and oil in a pan and add sliced onion and beetroot and saute.
- Add chopped tomato, garlic and cashew nuts and saute for 5 minutes.
- Add 1 tbsp chilli powder, 1/2 tsp turmeric powder and salt and mix well for a minute.
- Switch off the flame and let the mixture to cool and then grind to a smooth paste adding enough water and keep it aside.
- Heat 2 tbsp butter in the same pan and add cleaned chicken pieces, 1 tbsp chilli powder, 1 tsp turmeric powder and salt and fry it for 5 minutes.
- Then add the ground beetroot paste and cook at low flame till the chicken gets cooked completely.
- Add crushed kasuri methi and mix well.
- Add fresh cream and cumin powder into this and simmer for another 4-5 minutes.
- Garnish with chopped coriander leaves and remove from flame. Serve hot..
