Ingredients:


1 cup cooked rice

1- 1 1/2 cup yogurt / curd

2-3 tbsp grated beetroot

salt to taste

2 green chillies, chopped

6-8 cashew nuts

1 sprig curry leaves

1 tsp urad dal

1 tsp chana dal

1/2 tsp mustard seeds

2 dry red chillies

1 tbsp oil

2 tbsp coriander leaves, chopped


Preparation:


  1. In a bowl, add cooked rice, yogurt, grated beetroot and salt and mix well.
  2. Heat oil in a small pan and splutter mustard seeds. Add urad dal, chana dal and cashew nuts and saute until golden.
  3. Add dry red chilli, curry leaves and chopped green chillies and saute.
  4. Add this tempering and coriander leaves to the curd rice and mix well and serve...
