Ingredients:
1 cup cooked rice
1- 1 1/2 cup yogurt / curd
2-3 tbsp grated beetroot
salt to taste
2 green chillies, chopped
6-8 cashew nuts
1 sprig curry leaves
1 tsp urad dal
1 tsp chana dal
1/2 tsp mustard seeds
2 dry red chillies
1 tbsp oil
2 tbsp coriander leaves, chopped
Preparation:
- In a bowl, add cooked rice, yogurt, grated beetroot and salt and mix well.
- Heat oil in a small pan and splutter mustard seeds. Add urad dal, chana dal and cashew nuts and saute until golden.
- Add dry red chilli, curry leaves and chopped green chillies and saute.
- Add this tempering and coriander leaves to the curd rice and mix well and serve...
