beetroot-moru-kachiyathu

Ingredients:


2 tbsp grated beetroot

1 cup yogurt / curd

3 shallots, crushed

1 tbsp crushed ginger-garlic

3 green chillies, chopped

1 sprig curry leaves

1/2 tsp turmeric powder

1/2 tsp mustard seeds

1/2 tsp fenugreek seeds

2-3 dry red chillies

salt to taste

1 tbsp coconut oil


Preparation:


  1. In a blender, add yogurt and grind it with grated beetroot and keep it aside.
  2. Heat coconut oil in a pan and splutter mustard seeds. Add fenugreek seeds, dry red chillies and curry leaves.
  3. Add crushed ginger-garlic, shallots and green chillies and saute.
  4. Add turmeric powder and mix well.
  5. Then add yogurt mixture and salt and mix well. Do not let it boil.
  6. Remove from the flame and serve with rice...
