Beetroot Tabbouleh

Ingredients:
1/2 cup fine bulgur
1 cup boiling water
1 big beetroot, boiled and finely chopped
2 cups fresh parsley, finely chopped
1 tomato, finely chopped
1/2 onion, finely chopped
1/2 pomegranate arils ( seeds )
For the dressing :
1/2 cup lemon juice
2 tbsp olive oil
1/2 tsp freshly ground pepper
1 tsp dried mint
salt to taste
Preparation:
- In a bowl, add bulgur and and pour boiling water over it, stir with a fork and keep it covered for 30 minutes.
- Then fluff the bulgur with a fork and keep it aside until room temperature.
- Transfer the bulgur to a large bowl and add finely chopped beetroot, fresh parsley, tomato, onion and pomegranate and mix well.
- Add lemon juice, olive oil, dried mint, salt and freshly ground pepper and toss well until combined.
- Serve at room temperature or store in the refrigerator until ready to serve...
