Biscoff Chocolate Chip Cookies

Ingredients:


1 3/4 cups plain flour

1 tsp baking soda

1/2 tsp salt

1/2 cup unsalted butter, softened

1/2 cup biscoff spread / cookie butter

1/2 cup sugar

1/2 cup light brown sugar

1 large egg

1 tsp vanilla essence

1 1/2 cup chocolate chip


Preparation:


  1. Preheat the oven to 180 degree celcius. Line a large baking sheet / cookie sheet with baking paper and keep it aside.
  2. In a mixing bowl, add plain flour, baking soda and salt and whisk together and keep it aside.
  3. In another large bowl or in the bowl of electric mixer, cream together butter and biscoff spread / cookie butter for one minute on medium speed.
  4. Add sugar and brown sugar and mix on medium-high speed until light and fluffy for about 2 minutes.
  5. Add the egg and vanilla essence and mix until just combined.
  6. Reduce the speed to low and gradually add the flour mixture and beat until just combined. Do not overmix.
  7. Then fold in the chocolate chips.
  8. Using a 1 1/2 tbsp scoop, scoop the dough into balls and place them on the prepared baking sheet two inches apart.
  9. Top each dough ball with 2-3 chocolate chips.
  10. Bake for 10-12 minutes or until crispy around the edges and lightly browned.
  11. Remove from the oven and allow to cool for about 5 minutes on the baking sheet and then transfer to a wire rack to cool completely..........
