Biscoff Chocolate Chip Cookies

Ingredients:
1 3/4 cups plain flour
1 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
1/2 cup biscoff spread / cookie butter
1/2 cup sugar
1/2 cup light brown sugar
1 large egg
1 tsp vanilla essence
1 1/2 cup chocolate chip
Preparation:
- Preheat the oven to 180 degree celcius. Line a large baking sheet / cookie sheet with baking paper and keep it aside.
- In a mixing bowl, add plain flour, baking soda and salt and whisk together and keep it aside.
- In another large bowl or in the bowl of electric mixer, cream together butter and biscoff spread / cookie butter for one minute on medium speed.
- Add sugar and brown sugar and mix on medium-high speed until light and fluffy for about 2 minutes.
- Add the egg and vanilla essence and mix until just combined.
- Reduce the speed to low and gradually add the flour mixture and beat until just combined. Do not overmix.
- Then fold in the chocolate chips.
- Using a 1 1/2 tbsp scoop, scoop the dough into balls and place them on the prepared baking sheet two inches apart.
- Top each dough ball with 2-3 chocolate chips.
- Bake for 10-12 minutes or until crispy around the edges and lightly browned.
- Remove from the oven and allow to cool for about 5 minutes on the baking sheet and then transfer to a wire rack to cool completely..........
