Blueberry Lemon Poppy Seed Bread / Loaf

Ingredients:
1 1/2 cup plain flour
1 tsp baking powder
1/2 tsp salt
1 tbsp lemon zest
1/2 cup butter, at room temperature
3/4 cup sugar
2 large eggs
1/2 cup milk
1 tbsp poppy seeds
1 tsp vanilla essence
1 cup blueberries
Preparation:
- Preheat the oven to 180 degree celcius. Grease a loaf pan with butter or spray with baking spray ( or line with baking paper).
- In a large bowl, whisk together plain flour, baking powder, salt and lemon zest and keep it aside.
- In another large bowl, add butter and sugar and beat well until light and fluffy.
- Add eggs , one at a time and beat until well combined. Then add milk, poppy seeds and vanilla essence and beat at medium speed until combined.
- Gradually add in the flour mixture and beat until well combined,
- Now gently fold the blueberries into the batter with a spatula.
- Pour the batter into the prepared loaf pan and bake in the preheated oven for about 50-60 minutes or until the toothpick inserted in the centre comes out clean.
- Remove from the oven and cool for 10 minutes, then turn out onto a wire rack to cool completely... Then cut into slices and serve...
