Ingredients:
5 tbsp plain flour
2 tbsp sugar
1/4 tsp baking powder
3 tbsp milk
1 1/2-2 tbsp butter, melted and cooled
1/4 tsp vanilla essence
3 tbsp fresh blueberries
Preparation:
- In a small bowl, add plain flour, sugar and baking powder and whisk together until thoroughly combined.
- Add in milk, butter and vanilla essence and mix well using a whisk until the batter is smooth.
- Stir in blueberries and pour batter into a large microwave-safe mug.
- Cook in a microwave on high for 1 1/2-2 minutes or until the cake is done. Let cake cool for a couple of minutes before serving...
