Boiled Egg / Mutta Varattiyathu

Ingredients:

4 eggs

6 garlic cloves

small piece ginger

1 sprig curry leaves

1 tsp pepper corns

1/2 tsp fennel seeds

3 onions, finely chopped

3 green chillies, chopped

1 small tomato, chopped

1 tsp chilli powder

1 tsp coriander powder

1/2 tsp turmeric powder

1/2 tsp garam masala

1/2 cup capsicum, finely chopped (used green & red capsicums)

1/2 tsp mustard seeds

salt to taste

1 1/2 tbsp coconut oil

2 tbsp coriander leaves, chopped

Preparation:

  1. Boil the eggs and remove its shell. Then cut each egg into 4 pieces and separate yolks and whites and keep it aside.
  2. Crush together garlic cloves, ginger, curry leaves, pepper corns and fennel seeds and keep it aside.
  3. Heat oil in a pan and splutter mustard seeds.
  4. Add crushed mixture and saute well till the raw smell goes.
  5. Add chopped onions and green chillies and saute well. Add chopped tomato and saute well.
  6. Add chilli powder, coriander powder, turmeric powder, garam masala and salt and saute till raw smell goes.
  7. Add 1/4 cup of hot water to this and mix well.
  8. Then add chopped capsicum and mix well.
  9. When the water dries up, add the boiled egg whites and mix well. Then add yolks and gently mix.
  10. Garnish with chopped coriander leaves and serve....
