Boiled Egg / Mutta Varattiyathu

Ingredients:
4 eggs
6 garlic cloves
small piece ginger
1 sprig curry leaves
1 tsp pepper corns
1/2 tsp fennel seeds
3 onions, finely chopped
3 green chillies, chopped
1 small tomato, chopped
1 tsp chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp garam masala
1/2 cup capsicum, finely chopped (used green & red capsicums)
1/2 tsp mustard seeds
salt to taste
1 1/2 tbsp coconut oil
2 tbsp coriander leaves, chopped
Preparation:
- Boil the eggs and remove its shell. Then cut each egg into 4 pieces and separate yolks and whites and keep it aside.
- Crush together garlic cloves, ginger, curry leaves, pepper corns and fennel seeds and keep it aside.
- Heat oil in a pan and splutter mustard seeds.
- Add crushed mixture and saute well till the raw smell goes.
- Add chopped onions and green chillies and saute well. Add chopped tomato and saute well.
- Add chilli powder, coriander powder, turmeric powder, garam masala and salt and saute till raw smell goes.
- Add 1/4 cup of hot water to this and mix well.
- Then add chopped capsicum and mix well.
- When the water dries up, add the boiled egg whites and mix well. Then add yolks and gently mix.
- Garnish with chopped coriander leaves and serve....
