Bombay Chicken Biriyani ( Bombay Biriyani With Shan Biriyani Masala)

Ingredients:

1 kg basmati rice ( about 4 1/2 cup )

1 1/4 kg chicken, cleaned

3 big onions, sliced

3 big tomato, chopped

1 large potato, peeled and cubed

3 tbsp ginger-garlic paste

1 packet bombay biriyani masala ( I used Shan special biriyani masala)

1 cup less sour yogurt

salt to taste

1 cup oil

Preparation:

  1. Heat oil in a large thick bottomed pan and add sliced onion and saute well till golden brown.
  2. Add chopped tomato and saute well till soft and cooked and the oil separates.
  3. Add cleaned chicken pieces and saute for 2 minutes.
  4. Add ginger-garlic paste and mix well and saute till the raw smell goes.
  5. Add peeled and cubed potato and mix well.
  6. Then add bombay biriyani masala and mix well.
  7. Add yogurt and salt and mix well and saute for 10 minutes.
  8. Now add 1 1/2 cup hot water and mix well and cook covered until 3/4 cooked.
  9. In the meantime, boil enough water in a large pan and add drained rice and salt and cook the rice till half done.
  10. Drain the water from rice and add the rice on the top of the prepared chicken masala and cook covered on low flame for 10-15 minutes.
  11. Switch off the flame and keep it covered for another 10 minutes.
  12. Mix before serving and serve with raita, pickle and pappadum….
