Ingredients:
2 medium brinjals
4 garlic cloves
3 green chillies
12-15 shallots, sliced
1/2 tsp turmeric powder
3/4 tbsp kashmiri chilli powder
1 1/2 tbsp coriander powder
salt to taste
gooseberry sized tamarind
1/2 tsp jaggery
2 sprig curry leaves
1 cup thick coconut milk
1 tsp mustard seeds
2 dry red chillies
a pinch of chilli powder
1 tbsp oil
Preparation:
- Wash the brinjals and cut into pieces.
- Soak tamarind in 1/2 cup of water, extract its juice and keep it aside.
- Heat coconut oil in a pan and add curry leaves, green chillies and garlic and saute well.
- Add sliced shallots and saute well.
- Add turmeric powder, chilli powder and coriander powder and saute till raw smell goes.
- Add chopped brinjal and mix well.
- Add salt, tamarind water, jaggery and enough water and cook till done.
- Add thick coconut milk and mix well. Don't allow to boil.
- Heat oil in a pan and splutter mustard seeds and add dry red chillies and curry leaves.
- Add a pinch of chilli powder and switch off the flame.
- Add the seasoning over the curry and keep it covered for a few minutes. Mix well and serve it with hot rice...
