Ingredients:


2 medium brinjals

4 garlic cloves

3 green chillies

12-15 shallots, sliced

1/2 tsp turmeric powder

3/4 tbsp kashmiri chilli powder

1 1/2 tbsp coriander powder

salt to taste

gooseberry sized tamarind

1/2 tsp jaggery

2 sprig curry leaves

1 cup thick coconut milk

1 tsp mustard seeds

2 dry red chillies

a pinch of chilli powder

1 tbsp oil


Preparation:


  1. Wash the brinjals and cut into pieces.
  2. Soak tamarind in 1/2 cup of water, extract its juice and keep it aside.
  3. Heat coconut oil in a pan and add curry leaves, green chillies and garlic and saute well.
  4. Add sliced shallots and saute well.
  5. Add turmeric powder, chilli powder and coriander powder and saute till raw smell goes.
  6. Add chopped brinjal and mix well.
  7. Add salt, tamarind water, jaggery and enough water and cook till done.
  8. Add thick coconut milk and mix well. Don't allow to boil.
  9. Heat oil in a pan and splutter mustard seeds and add dry red chillies and curry leaves.
  10. Add a pinch of chilli powder and switch off the flame.
  11. Add the seasoning over the curry and keep it covered for a few minutes. Mix well and serve it with hot rice...
