broccoli-black-eyed-beans-vellapayar-thoran

Ingredients:


1 medium broccoli

1/4 cup black eyed beans / vellapayar

3/4 cup grated coconut

3 shallots

3 green chillies

1/2 tsp cumin seeds

1/2 tsp turmeric powder

salt to taste

2 dry red chillies

1 sprig curry leaves

1 tsp mustard seeds

1 tbsp coconut oil


Preparation:


  1. Soak the black eyed beans in water and pressure cook it adding enough water and salt. Drain the water and keep it aside.
  2. Wash and grate the broccoli and keep it aside.
  3. Crush together the grated coconut, shallots, green chillies, turmeric powder and cumin seeds.
  4. Add this crushed mixture, few curry leaves and salt to the grated broccoli and mix well.
  5. Heat oil in a pan and splutter mustard seeds and add dry red chillies.
  6. Add broccoli mix and cook covered for 5 minutes at low-medium flame, stirring occasionally
  7. Then add cooked black eyed beans, mix well and cook covered for 2-3 minutes on low flame.
