Ingredients:


2 cups idiyappam flour

2 cups of water

1 tbsp dried butterfly pea flowers ( Shankupushpam )

salt to taste


Preparation:


  1. In a saucepan, add 2 cups of water and bring to a boil.
  2. Add the dried butterfly pea flowers and let them steep for 4-5 minutes until the water turns a deep blue.
  3. Strain the water to remove the flowers and keep it aside.
  4. In a mixing bowl, add the idiyappam flour and salt and mix well.
  5. Gradually add the hot butterfly pea water as required and mix thoroughly by stirring with a wooden spoon.
  6. Then knead well with your hands until the dough becomes soft.
  7. Grease the idiyappam maker/press and idli plates with little oil to prevent sticking.
  8. Fill the dough in an idiyappam maker/ press and rotate/press little dough gently into the greased idli plates.
  9. Place the idli plates in a steamer and steam cook for 10-12 minutes or until done...Serve hot with side dish of your choice....
