Ingredients:
2 cups idiyappam flour
2 cups of water
1 tbsp dried butterfly pea flowers ( Shankupushpam )
salt to taste
Preparation:
- In a saucepan, add 2 cups of water and bring to a boil.
- Add the dried butterfly pea flowers and let them steep for 4-5 minutes until the water turns a deep blue.
- Strain the water to remove the flowers and keep it aside.
- In a mixing bowl, add the idiyappam flour and salt and mix well.
- Gradually add the hot butterfly pea water as required and mix thoroughly by stirring with a wooden spoon.
- Then knead well with your hands until the dough becomes soft.
- Grease the idiyappam maker/press and idli plates with little oil to prevent sticking.
- Fill the dough in an idiyappam maker/ press and rotate/press little dough gently into the greased idli plates.
- Place the idli plates in a steamer and steam cook for 10-12 minutes or until done...Serve hot with side dish of your choice....
