Cabbage - Beetroot Mezhukkupuratti / Stir Fry

Ingredients:
1 beetroot, grated / shredded
2 cups cabbage , grated / shredded
6 shallots, chopped
3 green chillies, chopped
2 garlic cloves, chopped
1 sprig curry leaves
1/2 tsp turmeric powder
salt to taste
1 tsp mustard seeds
1 tbsp coconut oil
Preparation:
- Peel and finely shred / grate the beetroot and keep it aside.
- Wash the cabbage and finely shred / grate and keep it aside.
- Heat oil in a pan and splutter mustard seeds.
- Add chopped shallots, green chillies, garlic and curry leaves and saute well until they start to change colour.
- Add turmeric powder into this and mix well.
- Then add grated cabbage, beetroot and salt and mix well.
- Cook covered at low flame until soft and completely cooked, stirring occasionally.
- Remove from the flame and serve with rice and other side-dishes…

Instructions
- 1Peel and finely shred/grate the beetroot.
- 2Wash and finely shred/grate the cabbage.
- 3Heat oil in a pan and splutter mustard seeds.
- 4Add chopped shallots, green chillies, garlic, and curry leaves, sauté until golden.
- 5Add turmeric powder and mix well.
- 6Add grated cabbage, beetroot, and salt, mix well.
- 7Cook covered on low flame until soft, stirring occasionally.
- 8Remove from flame and serve with rice.
