Cabbage Rice

Ingredients:
1 cup basmati rice
1 cup cabbage, chopped
1 small onion, chopped
1 tsp mustard seeds
1 tsp urad dal
1 tbsp peanuts
6-7 cashew nuts
2 dry red chillies
1/4 tsp turmeric powder
a pinch of asafoetida
1 sprig curry leaves
salt to taste
2 tbsp oil
Preparation:
- Soak the rice in water for about 30 minutes. Wash and cook the rice in a deep pan adding about 4-5 cups of water and salt till done. Drain the water and keep it aside.
- Heat oil in a pan and splutter mustard seeds. Add urad dal, peanuts, cashew nuts, dry red chillies and curry leaves and saute for a minute on medium flame.
- Reduce the flame and add turmeric powder and asafoetida and saute for few seconds.
- Add chopped onion, chopped cabbage and salt to this and saute for few minutes until it's cooked.
- Now add the cooked rice to this, mix well and cook for 3-4 minutes on low flame.
- Remove from the flame and serve hot...
