Ingredients:


1/2 cup cabbage, chopped

1/4 cup roasted gram / pottukadala

1/4 cup shallots, chopped

2 green chillies

2 garlic cloves

small piece ginger

small gooseberry sized tamarind

1 tsp cumin seeds

1 tbsp chana dal

1 tsp urad dal

1/2 tsp asafoetida

1 dry red chilli

1 sprig curry leaves

1 tsp mustard seeds

salt to taste

1 tbsp + 1 tbsp oil


Preparation:


  1. Heat 1 tbsp oil in a pan and splutter cumin seeds and chana dal.
  2. Add chopped green chillies, garlic and ginger and saute.
  3. Add chopped shallots and saute well till soft.
  4. Then add chopped cabbage, tamarind and salt and saute till the cabbage turns tender.
  5. Add roasted gram to this and roast for a minute. Switch off the flame and let it cool.
  6. Then grind together to a smooth paste adding 1 cup of water and transfer to a serving bowl.
  7. Adjust the salt and water to get a required consistency.
  8. Heat 1 tbsp oil in a pan and splutter mustard seeds and fry urad dal, asafoetida, dry red chilli and curry leaves.
  9. Pour this tempering over chutney and serve with dosa / idli / vada…
