Ingredients:


1/2 of 1 capsicum, chopped into small pieces

2 cups yogurt , beaten

1/2 cup grated coconut

2 green chillies

1/2 tsp cumin seeds

1/2 tsp turmeric powder

1/2 tsp ginger, finely chopped

1/2 tsp garlic, finely chopped

salt to taste

1/2 tsp mustard seeds

1/4 tsp fenugreek seeds

2 shallots, sliced

2 dry red chillies

1 sprig curry leaves

2 tsp + 1 tbsp coconut oil


Preparation:


  1. In a blender, add grated coconut, green chillies, cumin seeds and turmeric powder and grind together to a fine paste adding little water.
  2. Heat 2 tsp coconut oil in a pan and add finely chopped ginger and garlic and saute.
  3. Add chopped capsicum and saute well.
  4. Add 1/4 cup of water and salt and cook covered till the capsicum turns soft.
  5. Add ground coconut paste and 1/4 cup of water and mix well till the raw smell goes.
  6. Reduce the flame to low and add beaten yogurt and mix well. Adjust the salt and switch off the flame.
  7. Heat 1 tbsp coconut oil in a pan and splutter mustard seeds. Add fenugreek seeds, shallots, dry red chillies and curry leaves and fry.
  8. Add this to the moru curry and keep it covered for 10 minutes. Mix well and serve with rice...
