Ingredients:
1/2 of 1 capsicum, chopped into small pieces
2 cups yogurt , beaten
1/2 cup grated coconut
2 green chillies
1/2 tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp ginger, finely chopped
1/2 tsp garlic, finely chopped
salt to taste
1/2 tsp mustard seeds
1/4 tsp fenugreek seeds
2 shallots, sliced
2 dry red chillies
1 sprig curry leaves
2 tsp + 1 tbsp coconut oil
Preparation:
- In a blender, add grated coconut, green chillies, cumin seeds and turmeric powder and grind together to a fine paste adding little water.
- Heat 2 tsp coconut oil in a pan and add finely chopped ginger and garlic and saute.
- Add chopped capsicum and saute well.
- Add 1/4 cup of water and salt and cook covered till the capsicum turns soft.
- Add ground coconut paste and 1/4 cup of water and mix well till the raw smell goes.
- Reduce the flame to low and add beaten yogurt and mix well. Adjust the salt and switch off the flame.
- Heat 1 tbsp coconut oil in a pan and splutter mustard seeds. Add fenugreek seeds, shallots, dry red chillies and curry leaves and fry.
- Add this to the moru curry and keep it covered for 10 minutes. Mix well and serve with rice...
