Ingredients:
2 carrots ( 1 cup ), chopped
8 shallots
2-3 dry red chillies
2 garlic cloves
a small piece of tamarind
1/2 tsp mustard seeds
1/4 tsp urad dal
1 sprig curry leaves
salt to taste
1 1/2 tbsp oil
Preparation:
- Wash, peel and chop carrots into small pieces.
- Heat 1 tbsp oil in a pan and add dry red chillies and saute for a minute.
- Add shallots and garlic into this and saute for 2 minutes at low flame.
- Add chopped carrots , tamarind and salt and saute for another 5 minutes at low flame.
- Remove from the flame and allow the mixture to cool.
- Then grind together to a smooth paste adding about 3-4 tbsp of water and transfer it to a serving bowl.
- Heat 2 tsp oil in a pan and splutter mustard seeds and fry urad dal and curry leaves.
- Pour this tempering over carrot chutney and serve with dosa / idli...
