Ingredients:
1/2 cup raw rice/ pachari
1/2 cup milk ( add more if needed )
1 cup curd /yoghurt
1 carrot, finely grated
2 tbsp coriander leaves, chopped
1 tsp ginger, finely chopped
2 green chillies, finely chopped
1/4 tsp asafoetida
1 tsp mustard seeds
1 tsp urad dal
1 tbsp peanuts
few curry leaves
salt to taste
2 tbsp oil
Preparation:
- In a pressure cooker, add rice, milk and 2 cups of water and cook for 4-5 whistles till soft.
- Once the pressure releases, open the cooker and lightly mash the rice with the back of a ladle.
- Add yogurt and salt to the cooked rice and mix well without any lumps. Add more milk if required and mix well.
- Then add finely grated carrot and coriander leaves and mix well.
- Heat oil in a pan and splutter mustard seeds. Add urad dal and peanuts and saute for few seconds.
- Add curry leaves, green chillies, ginger and asafoetida and saute.
- Pour this tempering over the curd rice and mix well and then serve...
