Ingredients:


1/2 cup raw rice/ pachari

1/2 cup milk ( add more if needed )

1 cup curd /yoghurt

1 carrot, finely grated

2 tbsp coriander leaves, chopped

1 tsp ginger, finely chopped

2 green chillies, finely chopped

1/4 tsp asafoetida

1 tsp mustard seeds

1 tsp urad dal

1 tbsp peanuts

few curry leaves

salt to taste

2 tbsp oil


Preparation:


  1. In a pressure cooker, add rice, milk and 2 cups of water and cook for 4-5 whistles till soft.
  2. Once the pressure releases, open the cooker and lightly mash the rice with the back of a ladle.
  3. Add yogurt and salt to the cooked rice and mix well without any lumps. Add more milk if required and mix well.
  4. Then add finely grated carrot and coriander leaves and mix well.
  5. Heat oil in a pan and splutter mustard seeds. Add urad dal and peanuts and saute for few seconds.
  6. Add curry leaves, green chillies, ginger and asafoetida and saute.
  7. Pour this tempering over the curd rice and mix well and then serve...
