Carrot Egg Rice

Ingredients:

1 cup basmati rice

1 1/2 tbsp garlic, finely chopped

1 onion (1/2 cup), chopped

3 green chillies, chopped

1 sprig curry leaves

1 carrot, grated

salt to taste

1-2 eggs, beaten

1/2 tsp pepper powder

1/2 tsp chilli powder

1/4 tsp coriander powder

a pinch of turmeric powder

2 tbsp coriander leaves, chopped

2 tbsp oil

Preparation:

  1. Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
  2. Heat oil in a thick bottomed pan and add chopped garlic and saute well.
  3. Add chopped onion, green chillies and curry leaves and saute well.
  4. Add grated carrot and salt and saute well for 2-3 minutes till cooked.
  5. Then move everything to side of the pan and add little oil.
  6. Add the beaten eggs, pepper powder, chilli powder, coriander powder, turmeric powder and a pinch of salt and scramble/ stir continuously till the eggs are well cooked and dry and mix everything well.
  7. Then add 3 cups of cooked rice and chopped coriander leaves, mix well and cook for 3-4 minutes on low flame. Remove from the flame and serve hot…
