Carrot Egg Rice

Ingredients:
1 cup basmati rice
1 1/2 tbsp garlic, finely chopped
1 onion (1/2 cup), chopped
3 green chillies, chopped
1 sprig curry leaves
1 carrot, grated
salt to taste
1-2 eggs, beaten
1/2 tsp pepper powder
1/2 tsp chilli powder
1/4 tsp coriander powder
a pinch of turmeric powder
2 tbsp coriander leaves, chopped
2 tbsp oil
Preparation:
- Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
- Heat oil in a thick bottomed pan and add chopped garlic and saute well.
- Add chopped onion, green chillies and curry leaves and saute well.
- Add grated carrot and salt and saute well for 2-3 minutes till cooked.
- Then move everything to side of the pan and add little oil.
- Add the beaten eggs, pepper powder, chilli powder, coriander powder, turmeric powder and a pinch of salt and scramble/ stir continuously till the eggs are well cooked and dry and mix everything well.
- Then add 3 cups of cooked rice and chopped coriander leaves, mix well and cook for 3-4 minutes on low flame. Remove from the flame and serve hot…
