Carrot Paneer Pulao

Ingredients:

1 cup basmati rice

1 1/2 cup grated paneer

1 cup carrot, grated

1 big onion, chopped

1 green chilli, chopped

1 1/2 tsp ginger paste

1 1/2 tsp garlic paste

1/2 tsp turmeric powder

1 tsp kashmiri chilli powder

salt to taste

1/2 tsp cumin seeds

1/4-1/2 tsp garam masala

2 tbsp coriander leaves, chopped

2 tbsp oil

1 tbsp butter

Preparation:

  1. Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
  2. Heat oil and butter in a thick bottomed pan and add cumin seeds.
  3. When it splutters, add chopped onion and green chilli and saute well.
  4. Add turmeric powder into this and mix well.
  5. Add ginger paste and garlic paste and saute well.
  6. Reduce the flame and add kashmiri chilli powder and salt and mix well.
  7. Add grated paneer and carrot and mix well for 3-4 minutes.
  8. Then add cooked rice and mix well and cook on low-medium flame till the rice heated up well. Adjust the salt.
  9. Add chopped coriander leaves and garam masala and mix well. Remove from the flame and serve hot with raita and pickle....
