Ingredients:
1 small cauliflower
1 1/2 cup yogurt/ curd , or as required
1-2 green chillies, finely chopped
1/2 tsp urad dal
8 cashew nuts
3 tbsp carrot, finely chopped
2 tbsp cucumber, finely chopped
1 sprig curry leaves
1/2 tsp mustard seeds
2 tsp oil
salt to taste
Preparation:
- Wash and cut the cauliflower into florets.
- Then grate or pulse in a food processor and boil for a few minutes in enough water and drain well. Keep it aside until it cools down.
- Add yogurt and salt to this and mix well.
- Heat oil in a small pan and splutter mustard seeds and fry curry leaves.
- Add urad dal and cashew nuts and saute until golden.
- Add chopped green chilli and carrot and saute for a minute. Switch off the flame.
- Add this to the cauliflower - yogurt mixture and mix well.
- Add the chopped cucumber and mix well. Serve it with any pickle or any side dish.
