Ingredients:


1 small cauliflower

1 1/2 cup yogurt/ curd , or as required

1-2 green chillies, finely chopped

1/2 tsp urad dal

8 cashew nuts

3 tbsp carrot, finely chopped

2 tbsp cucumber, finely chopped

1 sprig curry leaves

1/2 tsp mustard seeds

2 tsp oil

salt to taste


Preparation:


  1. Wash and cut the cauliflower into florets.
  2. Then grate or pulse in a food processor and boil for a few minutes in enough water and drain well. Keep it aside until it cools down.
  3. Add yogurt and salt to this and mix well.
  4. Heat oil in a small pan and splutter mustard seeds and fry curry leaves.
  5. Add urad dal and cashew nuts and saute until golden.
  6. Add chopped green chilli and carrot and saute for a minute. Switch off the flame.
  7. Add this to the cauliflower - yogurt mixture and mix well.
  8. Add the chopped cucumber and mix well. Serve it with any pickle or any side dish.
