Cheese and Vegetable Loaded Egg Omelette

Ingredients:
2 large eggs
1 tbsp milk
4 mushrooms, sliced
1 cup baby spinach
1/4 cup capsicum, chopped
1/4 tsp pepper powder
1/4 tsp paprika / chilli powder
1/2 tsp chilli flakes
salt to taste
1/4 cup shredded / grated cheese
oregano / mixed herbs, for garnish
1 1/2-2 tbsp olive oil
Preparation:
- In a bowl, add eggs, milk, pinch of chilli flakes and salt and whisk until well combined.
- Heat 1 tbsp olive oil in a pan and add sliced mushrooms and stir fry until colour changes.
- Add spinach, chopped capsicum, pepper powder, paprika, chilli flakes and salt to taste and stir fry for 1-2 minutes. Transfer it to a plate.
- Add 1/2-1 tbsp olive oil in the same pan and add whisked eggs and let it cook on low flame.
- Then gently flip using a spatula and add stir fried vegetables and grated cheese along the center of the omelette.
- Fold the omelette over the filling and cover the pan with a lid and cook for a minute, until the cheese melts.
- Sprinkle little chilli flakes and oregano on top and serve hot...
