Cheesy Pasta Chicken Sticks

Ingredients:
2 pieces of chicken breasts
1 tbsp paprika powder
1 chilli powder
1 tsp pepper powder
1 tsp lemon juice
200 g penne pasta
3 tbsp olive oil
pizza sauce, as required
1/2 cup capsicums( red, green, yellow)
1 small onion, finely chopped
1 tsp oregano
1 tsp chilli flakes
black olives
4-5 tbsp mozzarella cheese, or as required
salt to taste
Preparation:
- In a bowl, add chilli powder, paprika powder, pepper powder, lemon juice, 1 tbsp lemon juice and salt and mix well.
- Then apply this paste on chicken breast pieces and marinate for 30 minutes.
- In a large sauce pan, boil 3 cups of water adding salt and 1 tbsp oil. Add penne pasta to this and cook for 8-10 minutes. Drain the water and let it cool down.
- Heat 1 tbsp oil in a pan and add marinated chicken and cook until fully tender on low-medium flame. Then slice the chicken into pieces and keep it aside.
- Take a skewer and thread 2 penne pasta, 1 chicken piece and then repeat another 3 sets of same pattern.
- Place on a baking plate lined with baking paper. Do the same pattern on remaining skewers with penne pasta and chicken pieces.
- Spread pizza sauce on both sides and then add cheese on top.
- Then sprinkle chopped capsicum, onion, oregano and chilli flakes and place 3 black olives in each skewer.
- Place a stand in a pan and preheat the pan for 8-10 minutes on medium flame.
- Place the baking plate on that stand and cook on low flame for 5 minutes or until cheese melts. You can also bake in a microwave for 2 minutes or in the preheated oven 180 degree for 3-5 minutes..
