Chicken and Vegetable Pot Pie

Ingredients:


250 gm boneless chicken, cut into pieces

1 small onion, chopped

3 garlic cloves, finely chopped

1/2 cup mushroom, chopped

1 cup mixed vegetables ( I used corn, carrot and green peas )

1/2 tsp Italian seasoning

1 tsp + 1 tsp pepper powder

1/2 tsp paprika

1 tsp garlic powder

2 tbsp plain flour

1 1/2 cup milk

2-3 tbsp fresh cream

1 chicken stock cube

salt to taste

1/2 cup mozzarella cheese

2 puff pastry sheets, cut into 2 inch squares

3 tbsp butter

1 egg (mixed with 1 tbsp water )


Preparation:


  1. Cook the chicken pieces adding 1 tsp pepper powder and salt, shred it and keep it aside.
  2. Heat butter in a pan and add chopped garlic, onion and mushrooms and saute well.
  3. Add shredded chicken, mixed vegetables, Italian seasoning, 1 tsp pepper powder, paprika, garlic powder and 1/2 tsp salt and mix well.
  4. Add plain flour, milk, fresh cream and chicken stock cube and mix well and cook until saucy and creamy.
  5. Preheat the oven to 180 degree celcius.
  6. Transfer the prepared filling to an oven proof dish / pan and sprinkle cheese on top.
  7. Then layer the puff pastry squares over the filling, slightly overlapping them.
  8. Brush with an egg wash and bake for 25-30 minutes until golden brown and flaky.
  9. Allow the pot pie to cool for 5-10 minutes and then serve...
