Chicken and Vegetable Pot Pie

Ingredients:
250 gm boneless chicken, cut into pieces
1 small onion, chopped
3 garlic cloves, finely chopped
1/2 cup mushroom, chopped
1 cup mixed vegetables ( I used corn, carrot and green peas )
1/2 tsp Italian seasoning
1 tsp + 1 tsp pepper powder
1/2 tsp paprika
1 tsp garlic powder
2 tbsp plain flour
1 1/2 cup milk
2-3 tbsp fresh cream
1 chicken stock cube
salt to taste
1/2 cup mozzarella cheese
2 puff pastry sheets, cut into 2 inch squares
3 tbsp butter
1 egg (mixed with 1 tbsp water )
Preparation:
- Cook the chicken pieces adding 1 tsp pepper powder and salt, shred it and keep it aside.
- Heat butter in a pan and add chopped garlic, onion and mushrooms and saute well.
- Add shredded chicken, mixed vegetables, Italian seasoning, 1 tsp pepper powder, paprika, garlic powder and 1/2 tsp salt and mix well.
- Add plain flour, milk, fresh cream and chicken stock cube and mix well and cook until saucy and creamy.
- Preheat the oven to 180 degree celcius.
- Transfer the prepared filling to an oven proof dish / pan and sprinkle cheese on top.
- Then layer the puff pastry squares over the filling, slightly overlapping them.
- Brush with an egg wash and bake for 25-30 minutes until golden brown and flaky.
- Allow the pot pie to cool for 5-10 minutes and then serve...
