Chicken Bhuna Masala
A rich and spicy chicken dish where meat is slow-cooked in a thick onion-tomato masala and aromatic Indian spices.

Ingredients:
3/4 kg chicken, cut into pieces
4 cardamoms
5 cloves
1 small piece cinnamon
1 bay leaf
1 1/2 tbsp garlic, finely chopped
1 tbsp ginger, finely chopped
2 green chillies, finely chopped
2 medium onions, finely chopped
salt to taste
2 tsp kashmiri chilli powder
1/4 tsp turmeric powder
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp pepper powder
2 medium tomatoes, finely chopped/ pureed
3 tbsp yogurt
2 tbsp coriander leaves, chopped
1/2 tsp kasuri methi
1/2 tsp garam masala
4 tbsp oil
Preparation:
- Heat oil in a kadai / large pan and add cardamoms, cloves, cinnamon and bay leaf and saute.
- Add chopped garlic, ginger and green chillies and saute until the raw smell disappears.
- Add finely chopped onion and salt and saute for a minute. Then cook covered for 3-4 minutes until the onion is soft.
- Add cleaned chicken pieces and cook over high flame for 2-3 minutes or until the chicken changes the colour.
- Then add kashmiri chilli powder, turmeric powder, coriander powder, cumin powder and pepper powder and mix well.
- Add the chopped tomatoes and mix well. Add yogurt into this and mix well and cook covered for 15-20 minutes until the chicken is cooked well.
- Add coriander leaves, kasuri methi and garam masala and stir and cook over medium flame for 3-4 minutes.
- Adjust the spice level to your taste and remove from the flame.. Serve hot with roti, paratha, neer dosa, pathiri etc..
