Chicken Bhuna Masala

Ingredients:


3/4 kg chicken, cut into pieces

4 cardamoms

5 cloves

1 small piece cinnamon

1 bay leaf

1 1/2 tbsp garlic, finely chopped

1 tbsp ginger, finely chopped

2 green chillies, finely chopped

2 medium onions, finely chopped

salt to taste

2 tsp kashmiri chilli powder

1/4 tsp turmeric powder

1 tsp coriander powder

1/2 tsp cumin powder

1/2 tsp pepper powder

2 medium tomatoes, finely chopped/ pureed

3 tbsp yogurt

2 tbsp coriander leaves, chopped

1/2 tsp kasuri methi

1/2 tsp garam masala

4 tbsp oil


Preparation:


  1. Heat oil in a kadai / large pan and add cardamoms, cloves, cinnamon and bay leaf and saute.
  2. Add chopped garlic, ginger and green chillies and saute until the raw smell disappears.
  3. Add finely chopped onion and salt and saute for a minute. Then cook covered for 3-4 minutes until the onion is soft.
  4. Add cleaned chicken pieces and cook over high flame for 2-3 minutes or until the chicken changes the colour.
  5. Then add kashmiri chilli powder, turmeric powder, coriander powder, cumin powder and pepper powder and mix well.
  6. Add the chopped tomatoes and mix well. Add yogurt into this and mix well and cook covered for 15-20 minutes until the chicken is cooked well.
  7. Add coriander leaves, kasuri methi and garam masala and stir and cook over medium flame for 3-4 minutes.
  8. Adjust the spice level to your taste and remove from the flame.. Serve hot with roti, paratha, neer dosa, pathiri etc..
