Ingredients:
300 gm boneless chicken, cut into strips
1 1/2 cup basmati rice
1 tsp + 1 tsp pepper powder
2 tbsp garlic, chopped
2 tbsp tomato paste
1 tbsp soy sauce
1/2 green capsicum, cut into strips
1/2 red capsicum, cut into strips
1/2 yellow capsicum, cut into strips
1 small onion, sliced
1 tsp garlic powder
1 tbsp paprika powder
1/2 tbsp chilli powder
1 tsp cumin powder
1 tsp oregano
salt to taste
1 tsp lemon juice
2 tbsp oil
2 tbsp spring onion, chopped
Preparation:
- Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
- In a bowl, add paprika powder, garlic powder, 1 tsp pepper powder, chilli powder, cumin powder, oregano and salt and mix well. Keep this fajita spice mix aside.
- Heat oil in a thick bottomed pan and add chopped garlic and saute.
- Add chicken pieces, 1 tsp pepper powder and salt and saute till the colour changes to white.
- Add tomato paste and soy sauce and mix well and cook the chicken till done.
- Then add the sliced capsicum and onion and mix well.
- Add fajita spice mix into this and mix well.
- Add 1/4 cup water into this and cook covered for 3-4 minutes.
- Then add the cooked rice, mix well and cook for 2-3 minutes on low flame.
- Adjust the salt and add lemon juice and mix well.
- Garnish with chopped spring onions and switch off the flame and serve hot..
