Ingredients:


300 gm boneless chicken, cut into strips

1 1/2 cup basmati rice

1 tsp + 1 tsp pepper powder

2 tbsp garlic, chopped

2 tbsp tomato paste

1 tbsp soy sauce

1/2 green capsicum, cut into strips

1/2 red capsicum, cut into strips

1/2 yellow capsicum, cut into strips

1 small onion, sliced

1 tsp garlic powder

1 tbsp paprika powder

1/2 tbsp chilli powder

1 tsp cumin powder

1 tsp oregano

salt to taste

1 tsp lemon juice

2 tbsp oil

2 tbsp spring onion, chopped


Preparation:


  1. Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
  2. In a bowl, add paprika powder, garlic powder, 1 tsp pepper powder, chilli powder, cumin powder, oregano and salt and mix well. Keep this fajita spice mix aside.
  3. Heat oil in a thick bottomed pan and add chopped garlic and saute.
  4. Add chicken pieces, 1 tsp pepper powder and salt and saute till the colour changes to white.
  5. Add tomato paste and soy sauce and mix well and cook the chicken till done.
  6. Then add the sliced capsicum and onion and mix well.
  7. Add fajita spice mix into this and mix well.
  8. Add 1/4 cup water into this and cook covered for 3-4 minutes.
  9. Then add the cooked rice, mix well and cook for 2-3 minutes on low flame.
  10. Adjust the salt and add lemon juice and mix well.
  11. Garnish with chopped spring onions and switch off the flame and serve hot..
