Ingredients:


For the filling:


300 gm boneless chicken, cut into pieces

1 big onion, chopped

1 big carrot, chopped

1 tbsp garlic, finely chopped

1/2 cup capsicum, chopped

1/2 tsp paprika

1/2 tsp chilli powder

1/2 tsp garlic powder

1/2 tsp + 1/2 tsp pepper powder

1 tsp mixed herbs

salt to taste

1/2 cup cream

1 tbsp hot sauce

3/4 cup cheese, grated

2 tbsp coriander leaves, chopped

3 tbsp butter


For the Dough:


300 ml warm milk

3 tbsp sugar

1 tsp instant yeast

2 eggs, at room temperature

2 tbsp melted butter

4 1/2 cup plain flour

1 tsp salt

1 egg, beaten

sesame seeds, as required


Preparation:


For the filling:


  1. Cook the chicken pieces adding 1/2 tsp pepper powder, salt and enough water. Shred the chicken pieces and keep it aside.
  2. Heat a pan and melt butter and add chopped garlic, onion and carrot and saute until soft.
  3. Add capsicum, paprika, chilli powder, garlic powder, 1/2 tsp pepper powder, mixed herbs and salt and mix well.
  4. Pour in the cream and hot sauce and cook until the mixture turns slightly thick.
  5. Add cheese and mix until it melts.
  6. Then add shredded chicken and chopped coriander leaves and stir and mix everything well.
  7. Remove from the flame and allow the filling to cool completely before stuffing.


For the Dough:


  1. In a bowl, add warm milk, sugar and instant yeast and mix well. Let it sit for 5-10 minutes until frothy.
  2. Add eggs and melted butter and whisk well.
  3. Gradually add plain flour and salt, mixing until a soft dough forms and then knead the dough for 8-10 minutes until smooth.
  4. Cover and let it rise for 1-1 1/2 hours or until doubled in size.
  5. Once risen, punch down the dough and divide it into equal portions.
  6. Then flatten each portion and add 1-2 tbsp of the prepared filling and seal tightly into a bun shape.
  7. Place the buns on a parchment lined tray, cover and let them proof again for 30-40 minutes.
  8. Preheat the oven to 180 degree celcius.
  9. Brush the buns with egg wash and sprinkle sesame seeds on top and bake for 20-25 minutes or until golden brown.
