Ingredients:


2 large eggs

shallots, sliced

1 green chilli, chopped

2 tbsp grated coconut

few curry leaves

salt to taste

1 1/2 tsp coconut oil


Preparation:


  1. In a bowl, add eggs, shallots, green chill and salt and beat well using a spoon.
  2. Add grated coconut to this and mix well.
  3. Heat coconut oil in a pan and pour the beaten egg mixture and sprinkle the curry leaves on top.
  4. Cook at medium flame for few minutes until set and the bottom side turns golden.
  5. Then flip to the other side and cook for 1-2 minutes until done.
  6. Switch off and serve with rice and other side dishes...
