Ingredients:
2 large eggs
shallots, sliced
1 green chilli, chopped
2 tbsp grated coconut
few curry leaves
salt to taste
1 1/2 tsp coconut oil
Preparation:
- In a bowl, add eggs, shallots, green chill and salt and beat well using a spoon.
- Add grated coconut to this and mix well.
- Heat coconut oil in a pan and pour the beaten egg mixture and sprinkle the curry leaves on top.
- Cook at medium flame for few minutes until set and the bottom side turns golden.
- Then flip to the other side and cook for 1-2 minutes until done.
- Switch off and serve with rice and other side dishes...
