Corn Methi Pulao
A fragrant and flavorful Indian rice dish. It's a quick and easy one-pot meal, perfect for a satisfying lunch or dinner.

Ingredients:
1 cup basmati rice
50 gm fenugreek leaves / methi leaves
3/4 cup sweetcorn kernels
1 small onion, chopped
1 tsp ginger-garlic paste
1/4 tsp pepper powder
1/2-1 tsp chilli flakes
1 tbsp coriander leaves, chopped
salt to taste
1 tsp cumin seeds
2 tbsp oil
Preparation:
- Wash the rice and cook it in a deep pan adding enough water and salt till done. Drain the water and keep it aside.
- Heat oil in a pan and add cumin seeds. When it splutters, add ginger-garlic paste and chopped onion and saute well.
- Add chopped fenugreek leaves, sweet corn, pepper powder, chilli flakes and salt and mix well for 2-3 minutes.
- Then add the cooked rice and chopped coriander leaves to this, mix well and cook for 2 minutes on low flame. Remove from flame and serve hot...
