Creamy Broccoli

Ingredients:
2 cups broccoli florets
1 small onion, finely chopped
5 garlic cloves, finely chopped
2-3 tsp chilli flakes (adjust to your taste)
2 tsp mixed herbs
salt to taste
1 1/2 tbsp oil
1 tbsp butter
1 tbsp plain flour
1/2-3/4 cup milk (adjust accordingly)
2-3 tbsp grated cheese
Preparation:
- In a pan, boil water adding little salt. Add broccoli florets to this and boil for 2-3 minutes. Switch off and put the broccoli into the cold water taken in a bowl for 1 minute (blanching). Drain the water and keep it aside.
- Heat oil in a pan and add chopped garlic, onion, chilli flakes and mixed herbs and saute well.
- Add blanched broccoli and salt and saute well.
- Then move the sautéed broccoli to the side of the pan and add butter in the middle of the pan.
- Add plain flour into this and saute well for a minute at low flame.
- Then mix everything well and add milk and mix well until it thickens.
- Add cheese and mix for 4-5 minutes till well combined. Serve as a side or as a main meal...
