Ingredients:


2 cups broccoli florets

1 small onion, finely chopped

5 garlic cloves, finely chopped

2-3 tsp chilli flakes (adjust to your taste)

2 tsp mixed herbs

salt to taste

1 1/2 tbsp oil

1 tbsp butter

1 tbsp plain flour

1/2-3/4 cup milk (adjust accordingly)

2-3 tbsp grated cheese


Preparation:


  1. In a pan, boil water adding little salt. Add broccoli florets to this and boil for 2-3 minutes. Switch off and put the broccoli into the cold water taken in a bowl for 1 minute (blanching). Drain the water and keep it aside.
  2. Heat oil in a pan and add chopped garlic, onion, chilli flakes and mixed herbs and saute well.
  3. Add blanched broccoli and salt and saute well.
  4. Then move the sautéed broccoli to the side of the pan and add butter in the middle of the pan.
  5. Add plain flour into this and saute well for a minute at low flame.
  6. Then mix everything well and add milk and mix well until it thickens.
  7. Add cheese and mix for 4-5 minutes till well combined. Serve as a side or as a main meal...
