Ingredients:
2 salmon fillets
1 tsp paprika
pepper powder, to taste
salt, to taste
4 garlic cloves, minced
1 cup mushrooms, sliced
2 cups fresh spinach
1 cup cream
1/4 cup grated parmesan cheese
1/2 tsp chilli flakes
1 tsp Italian seasoning
1 tsp lemon juice
1 tbsp olive oil
2 tbsp butter
Preparation:
- Pat dry salmon fillets and season with paprika, pepper powder and salt.
- Heat olive oil in a pan and add the salmon fillets and cook for 4-5 minutes per side over medium flame until golden brown and cooked through. Remove from the pan and keep it aside.
- In the same pan, melt butter and add minced garlic and saute for about 30 seconds.
- Add sliced mushrooms and saute for 3-4 minutes until softened and lightly browned.
- Add spinach and stir well and cook until wilted.
- Pour in cream and stir in parmesan cheese, chilli flakes and Italian seasoning and simmer for 2-3 minutes until the sauce becomes creamy and smooth. Adjust the salt and pepper powder.
- Return the salmon fillets to the pan and spoon the creamy sauce over the fillets and simmer for another 1-2 minutes.
- Squeeze lemon juice over the top and serve...
