Crispy Coconut Prawns / Shrimps

Ingredients:
15 prawns / shrimps with tail on
1/2 tsp pepper powder
salt to taste
1 cup panko bread crumbs
1 cup grated coconut
2 eggs
1 cup plain flour
1/4 tsp chilli powder
a pinch of garlic powder
2 tsp cornflour
oil, for frying
Preparation:
- Clean the prawns and butterfly cut them ( slit through the middle and slightly press ) and then marinate it with pepper powder and salt.
2.In a bowl, combine panko bread crumbs and grated coconut and keep it aside.
3.In another bowl, beat well eggs and keep it aside,
4.Combine plain flour, chilli powder and garlic powder in a plate.
5.Dust the marinated prawns in flour mixture and then dip in the beaten egg.
6.Then coat it well with panko coconut mixture.
7.Make a cornflour slurry by mixing 2 tsp corn flour with little water and sprinkle for additional crispiness and binding.
8.Heat oil in a pan and fry in small batches for 3-4 minutes at medium flame. Serve hot with any dip of your choice...
