Ingredients:
2 cups white thin beaten rice ( poha / aval / avalakki )
1 small cucumber ( 1 - 1 1/4 cup grated cucumber )
1/2-3/4 cup grated coconut
salt to taste
2-3 dry red chillies, broken
1 sprig curry leaves
1 tsp chana dal
1 1/2 tsp urad dal
1 tsp mustard seeds
a pinch of asafoetida
2 tbsp peanuts / ground nut
2 tbsp coriander leaves, chopped
1 1/2 tbsp oil
Preparation:
- In a bowl, add beaten rice, grated cucumber, grated coconut and salt and mix well with hand. Keep it aside.
- Heat oil in a pan and splutter mustard seeds and add urad dal, chana dal, dry red chillies, curry leaves, peanuts and a pinch of asafoetida and roast well at low flame till colour starts to change to golden brown.
- Then add beaten rice mixture and mix well gently till well combined.
- Add chopped coriander leaves and mix well and remove from the flame.
- If the beaten rice / poha is thick, just rinse well in water and use...
