Ingredients:
1 cucumber, peeled and chopped
1/2 cup grated coconut
small piece ginger
1 garlic clove
2-3 green chillies
handful of coriander leaves, chopped
1/2 tsp cumin seeds
1/2 tsp peppercorns
1 cup curd / yogurt
salt to taste
For Tempering:
1/2 tsp mustard seeds
1/2 tsp cumin seeds
3 dry red chillies
1 sprig curry leaves
1 tbsp coconut oil
Preparation:
- In a blender, add chopped cucumber, grated coconut, ginger, garlic, green chillies, coriander leaves, cumin seeds and pepper corns and blend well to a smooth paste.
- In a bowl, add curd and whisk / beat until smooth.
- Add cucumber paste and salt into this and mix well. Add water as required and mix well until smooth.
- Heat coconut oil in a pan and splutter mustard seeds and add cumin seeds, dry red chillies and curry leaves.
- Pour this tempering over the cucumber tambuli and mix gently. Serve with hot rice...
