Dates - Garlic Pickle

Ingredients:

1/2 cup pitted dates, cut into small pieces

1/4 cup small garlic cloves, peeled

1 green chilli, finely chopped

1 sprig curry leaves

1 tbsp chilli powder

1/2 tsp turmeric powder

1/4 tsp fenugreek powder

1/4 tsp asafoetida powder

1/4 cup vinegar

1/2 cup hot water

1 1/2 tsp salt

1/2 tsp mustard seeds

2 tbsp gingelly oil / sesame oil

Preparation:

  1. Heat sesame oil in a pan and add splutter mustard seeds.
  2. When it splutters, add chopped green chilli, garlic and curry leaves and saute well till garlic turns soft.
  3. Reduce the flame to very low and add chilli powder, turmeric powder, fenugreek powder and asafoetida powder and saute till raw smell goes for about a minute.
  4. Add vinegar into this and mix well at medium flame
  5. Add 1/2 cup of hot water and mix well. When it boils, add salt and mix well.
  6. Add chopped dates into this and mix well.
  7. When it boils, reduce the flame to low and cook for about 3 minutes till dates turn soft and thick.
  8. Remove from the flame and keep it aside to cool to room temperature.
  9. Transfer to a glass bottle / jar and serve with rice, biriyani etc..
