Dates - Garlic Pickle

Ingredients:
1/2 cup pitted dates, cut into small pieces
1/4 cup small garlic cloves, peeled
1 green chilli, finely chopped
1 sprig curry leaves
1 tbsp chilli powder
1/2 tsp turmeric powder
1/4 tsp fenugreek powder
1/4 tsp asafoetida powder
1/4 cup vinegar
1/2 cup hot water
1 1/2 tsp salt
1/2 tsp mustard seeds
2 tbsp gingelly oil / sesame oil
Preparation:
- Heat sesame oil in a pan and add splutter mustard seeds.
- When it splutters, add chopped green chilli, garlic and curry leaves and saute well till garlic turns soft.
- Reduce the flame to very low and add chilli powder, turmeric powder, fenugreek powder and asafoetida powder and saute till raw smell goes for about a minute.
- Add vinegar into this and mix well at medium flame
- Add 1/2 cup of hot water and mix well. When it boils, add salt and mix well.
- Add chopped dates into this and mix well.
- When it boils, reduce the flame to low and cook for about 3 minutes till dates turn soft and thick.
- Remove from the flame and keep it aside to cool to room temperature.
- Transfer to a glass bottle / jar and serve with rice, biriyani etc..
