Drumstick / Muringakka Sambar

Ingredients:

4 drumsticks / muringakka

1/2 cup toor dal

gooseberry sized tamarind

1 onion, chopped

1 tomato, chopped

2 green chillies, slit

1/4 tsp turmeric powder

1 tbsp chilli powder

2 tbsp sambar powder

salt to taste

1 tsp mustard seeds

3 dry red chillies

1 sprig curry leaves

2 tbsp coriander leaves, chopped

1 tbsp oil

Preparation:

  1. Cut the drumsticks into pieces.
  2. Soak toor dal in water for 1/2 an hour and pressure cook adding salt and enough water and mash it well and keep it aside.
  3. Soak tamarind in little water for 10 minutes, extract its juice and keep it aside.
  4. In a pan, add drumstick pieces, turmeric powder, chilli powder, salt and 2 cups of water, mix well and cook covered till done.
  5. When drumstick is cooked well, add cooked dal, tamarind extract, chopped onion, tomato and green chillies and mix well.
  6. Cover and allow it to boil for 5 minutes at medium flame.
  7. Then add sambar powder and mix well and bring to boil. Add water if needed and adjust the salt.
  8. Add chopped coriander leaves and mix well and switch off the flame.
  9. Heat oil in a small pan and splutter mustard seeds.
  10. Add dry red chillies and curry leaves and pour into the sambar, mix well and keep covered for 10 minutes. Serve with rice, dosa, idli etc...
