Drumstick / Muringakka Sambar

Ingredients:
4 drumsticks / muringakka
1/2 cup toor dal
gooseberry sized tamarind
1 onion, chopped
1 tomato, chopped
2 green chillies, slit
1/4 tsp turmeric powder
1 tbsp chilli powder
2 tbsp sambar powder
salt to taste
1 tsp mustard seeds
3 dry red chillies
1 sprig curry leaves
2 tbsp coriander leaves, chopped
1 tbsp oil
Preparation:
- Cut the drumsticks into pieces.
- Soak toor dal in water for 1/2 an hour and pressure cook adding salt and enough water and mash it well and keep it aside.
- Soak tamarind in little water for 10 minutes, extract its juice and keep it aside.
- In a pan, add drumstick pieces, turmeric powder, chilli powder, salt and 2 cups of water, mix well and cook covered till done.
- When drumstick is cooked well, add cooked dal, tamarind extract, chopped onion, tomato and green chillies and mix well.
- Cover and allow it to boil for 5 minutes at medium flame.
- Then add sambar powder and mix well and bring to boil. Add water if needed and adjust the salt.
- Add chopped coriander leaves and mix well and switch off the flame.
- Heat oil in a small pan and splutter mustard seeds.
- Add dry red chillies and curry leaves and pour into the sambar, mix well and keep covered for 10 minutes. Serve with rice, dosa, idli etc...
