Ingredients:
4 hard boiled eggs
3 onions, sliced
2 green chillies
1 tsp ginger, chopped
1 tsp garlic, chopped
2 sprig curry leaves
1 tomato, sliced
1 1/2 tbsp kashmiri chilli powder
1/4 tsp turmeric powder
1/2 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp pepper powder
1/2 tsp fennel powder
1/4 tsp garam masala
salt to taste
2 tbsp coconut oil
Preparation:
- Heat oil in a pressure cooker and add sliced onions, green chillies, ginger, garlic and curry leaves and saute till onion turns transparent.
- Add turmeric powder, kashmiri chilli powder, coriander powder, cumin powder, pepper powder, fennel powder and garam masala and mix well.
- Add sliced tomato and salt, mix well and saute for a minute.
- Add 1 cup of water to this and cook covered for 2-3 whistles.
- When the pressure releases, open the cooker and add eggs, 1/2 tsp coconut oil and some curry leaves and mix well. Serve with pathiri, neer dosa etc...
