Ingredients:

4 hard boiled eggs

3 onions, sliced

2 green chillies

1 tsp ginger, chopped

1 tsp garlic, chopped

2 sprig curry leaves

1 tomato, sliced

1 1/2 tbsp kashmiri chilli powder

1/4 tsp turmeric powder

1/2 tsp coriander powder

1/2 tsp cumin powder

1/2 tsp pepper powder

1/2 tsp fennel powder

1/4 tsp garam masala

salt to taste

2 tbsp coconut oil

Preparation:

  1. Heat oil in a pressure cooker and add sliced onions, green chillies, ginger, garlic and curry leaves and saute till onion turns transparent.
  2. Add turmeric powder, kashmiri chilli powder, coriander powder, cumin powder, pepper powder, fennel powder and garam masala and mix well.
  3. Add sliced tomato and salt, mix well and saute for a minute.
  4. Add 1 cup of water to this and cook covered for 2-3 whistles.
  5. When the pressure releases, open the cooker and add eggs, 1/2 tsp coconut oil and some curry leaves and mix well. Serve with pathiri, neer dosa etc...
