Ingredients:


1/2 kg chicken, cleaned

1 big onion, sliced

1 small piece ginger

3-4 big garlic cloves

2-3 green chillies

1 sprig curry leaves

1 tomato, chopped

1 tsp pepper powder

1/4 tsp garam masala

1 cup tender coconut water

1 cup elaneer / tender coconut pulp

10 cashew nuts, soaked in water

salt to taste

2 tbsp coriander leaves, chopped

1 /2 tbsp coconut oil


Preparation:


  1. Heat oil in a pan and add curry leaves and sliced onion and saute well till soft.
  2. Crush the ginger, garlic and green chillies together and add this paste and saute well till the raw smell goes.
  3. Add chopped tomato and saute well till soft.
  4. Add cleaned chicken pieces, salt, pepper powder and garam masala and mix well.
  5. Add 3/4 cup of tender coconut water and cook covered till done.
  6. In the meantime, grind tender coconut pulp and soaked cashew nuts adding 1/4 cup of tender coconut water to a smooth paste.
  7. Add this tender coconut paste to the cooked chicken and mix well.
  8. Garnish with chopped coriander leaves and serve...
