Ingredients:
1/2 kg chicken, cleaned
1 big onion, sliced
1 small piece ginger
3-4 big garlic cloves
2-3 green chillies
1 sprig curry leaves
1 tomato, chopped
1 tsp pepper powder
1/4 tsp garam masala
1 cup tender coconut water
1 cup elaneer / tender coconut pulp
10 cashew nuts, soaked in water
salt to taste
2 tbsp coriander leaves, chopped
1 /2 tbsp coconut oil
Preparation:
- Heat oil in a pan and add curry leaves and sliced onion and saute well till soft.
- Crush the ginger, garlic and green chillies together and add this paste and saute well till the raw smell goes.
- Add chopped tomato and saute well till soft.
- Add cleaned chicken pieces, salt, pepper powder and garam masala and mix well.
- Add 3/4 cup of tender coconut water and cook covered till done.
- In the meantime, grind tender coconut pulp and soaked cashew nuts adding 1/4 cup of tender coconut water to a smooth paste.
- Add this tender coconut paste to the cooked chicken and mix well.
- Garnish with chopped coriander leaves and serve...
