Feijoa Pancakes

These fluffy feijoa pancakes are a delightful breakfast treat, featuring mashed feijoa flesh combined with a simple batter. Serve them warm with your favorite syrup for a perfect start to your day.

Ingredients:


1 cup feijoa flesh, mashed using a fork

1 cup plain flour

1/4 cup sugar

1 1/2 tsp baking powder

a pinch of salt

1 egg

3/4 cup milk

50 gm butter, melted


Preparation:


  1. In a mixing bowl, add plain flour, baking powder, sugar and salt and mix well.
  2. Whisk milk and egg together in another bowl until thoroughly combined.
  3. Make a well in the flour mixture and add egg-milk mixture and combine well until smooth without any lumps.
  4. Add the cooled melted butter into this and mix thoroughly.
  5. Then add the mashed feijoas and mix until combined.
  6. Heat a non stick frying pan or pancake pan over medium heat and lightly brush the pan with melted butter or cooking spray.
  7. Using a small ladle or scoop, pour about 1/4 cup pancake batter onto the hot pan and cook on medium-low flame for 2-3 minutes.
  8. When bubbles starts to appear on the uncooked top surface of the pancake, turn over and cook the other side for another 1-2 minutes.
  9. Repeat with remaining batter, brushing the pan with melted butter or oil.
  10. Serve warm with maple syrup or any syrup of your choice…


  • Instead of mashed feijoas, you can also use finely chopped feijoas for this pancake...
