Feijoa Pancakes
These fluffy feijoa pancakes are a delightful breakfast treat, featuring mashed feijoa flesh combined with a simple batter. Serve them warm with your favorite syrup for a perfect start to your day.

Ingredients:
1 cup feijoa flesh, mashed using a fork
1 cup plain flour
1/4 cup sugar
1 1/2 tsp baking powder
a pinch of salt
1 egg
3/4 cup milk
50 gm butter, melted
Preparation:
- In a mixing bowl, add plain flour, baking powder, sugar and salt and mix well.
- Whisk milk and egg together in another bowl until thoroughly combined.
- Make a well in the flour mixture and add egg-milk mixture and combine well until smooth without any lumps.
- Add the cooled melted butter into this and mix thoroughly.
- Then add the mashed feijoas and mix until combined.
- Heat a non stick frying pan or pancake pan over medium heat and lightly brush the pan with melted butter or cooking spray.
- Using a small ladle or scoop, pour about 1/4 cup pancake batter onto the hot pan and cook on medium-low flame for 2-3 minutes.
- When bubbles starts to appear on the uncooked top surface of the pancake, turn over and cook the other side for another 1-2 minutes.
- Repeat with remaining batter, brushing the pan with melted butter or oil.
- Serve warm with maple syrup or any syrup of your choice…
- Instead of mashed feijoas, you can also use finely chopped feijoas for this pancake...
