Fried Chicken Roast

Ingredients:
1/2 kg chicken, cut into pieces
1 big onion, thinly sliced
1 tbsp ginger-garlic paste
1 1/2 tsp + 1 tsp chilli powder
1 tsp + 1 tsp coriander powder
1/4 tsp + 1/2 tsp turmeric powder
1 tsp + 1 tsp garam masala
3 tbsp + 2 tbsp yogurt
salt to taste
1 tbsp ginger, chopped
1 tbsp garlic, chopped
3 green chillies, slit
1 sprig curry leaves
2 medium tomatoes, chopped
1/2-1 tsp fennel powder
2 tbsp coriander leaves, chopped
oil, as required
Preparation:
- In a bowl, add cleaned chicken pieces, ginger-garlic paste, 1 1/2 tsp chilli powder, 1 tsp coriander powder, 1/4 tsp turmeric powder, 1 tsp garam masala, 3 tbsp yogurt and salt and marinate for at least 30 minutes.
- Fry the thinly sliced onions in the oil till golden and keep it aside.
- Heat 2 tbsp oil in a pan and fry the marinated chicken pieces until cooked and golden brown. Keep it aside.
- In the same pan ( add more onion fried oil if required ), add chopped ginger, garlic, green chillies and curry leaves and saute well until fragrant.
- Add chopped tomatoes and cook until soft.
- Add 1 tsp chilli powder, 1 tsp coriander powder, 1/2 tsp turmeric powder, 1 tsp garam masala, fennel powder and salt and mix well and cook covered for 1-2 minutes.
- Add the fried onions into this and mix well.
- Add 2 tbsp yogurt, mix well and cook for a minute.
- Then add the fried chicken and mix well for 1-2 minutes until coated evenly.
- Cook on low flame for 7-8 minutes until the masala is well coated with chicken pieces, stirring in between.
- Garnish with chopped coriander leaves and remove from flame. Serve hot...
