Hyderabadi Paneer

Ingredients:
300 gm paneer, cut into cubes
1 big onion ( 3/4 cup ), chopped
1 tsp ginger, chopped
2 tsp garlic, chopped
3-4 green chillies, chopped
4-5 cashew nuts
2 small tomatoes, chopped
1 cup spinach
3/4 cup coriander leaves
salt to taste
2 tbsp yogurt
1/4 tsp turmeric powder
1/2 tsp chilli powder
1 tsp coriander powder
1/4 tsp cumin powder
1/4-1/2 tsp garam masala
a pinch of sugar
3 green cardamoms
1 black cardamom
1 bay leaf
4 cloves
1/2 inch cinnamon piece
1/4 grated paneer
2-3 tbsp fresh cream
1 1/2 tbsp + 1 tbsp oil
1 1/2 tbsp butter
Preparation:
- Heat 1 1/2 tbsp oil in a pan and add chopped onion, ginger, garlic, green chillies and a pinch of salt and saute well till the onion turns transparent.
- Add cashew nuts and chopped tomatoes and cook till tomato gets soft and mashed up.
- Add spinach, coriander leaves and salt to taste and cook for few minutes.
- Switch off the flame and keep it aside to cool completely. Then grind to a smooth paste adding 3-4 tbsp of water.
- Heat 1 tbsp oil and 1 tbsp butter over medium flame in a pan and add green cardamoms, black cardamom, bay leaf, cloves and cinnamon and stir for few seconds.
- Add the ground paste and cook for 2 minutes.
- Add yogurt and cook for 3-4 minutes.
- Add turmeric powder, chilli powder, coriander powder and cumin powder and cook over low flame for 1-2 minutes.
- Add hot water and salt and mix well and bring to a boil.
- Add garam masala and a pinch of sugar and mix well.
- Add paneer cubes and cook for 3-4 minutes. Switch off the flame.
- Sprinkle grated paneer and add cream and mix gently and top it with 1-2 tsp butter. Serve hot..
