Jackfruit Cake / Chakka Cake

Ingredients:
1 cup plain flour
1/2 tsp baking powder
1/4 tsp baking soda
a pinch of salt
1/2 cup + 1/2 cup sugar
1/4 cup water
3 cloves
10 - 12 jackfruit pieces
2 eggs
1 tp vanilla essence
1/2 cup oil
10 cashew nuts, chopped
8-10 cashew nuts, for garnishing
Preparation:
- Preheat the oven to 180 degree celcius. Grease a round cake tin with butter / baking spray or line with baking paper.
- In a pan, add 1/2 cup sugar and heat at low-medium flame till it melts. Add 1/4 cup water carefully and mix and boil. Switch off the flame and keep it aside to cool.
- Add 1/2 cup sugar and cloves in a blender and make it to powder and keep it aside.
- In a bowl, sift together plain flour, baking powder, baking soda and salt and keep it aside.
- Place 10 chopped cashew nuts in a separate bowl and toss them with 1 tbsp flour mixture and keep it aside ( this will help prevent the cashew nuts from sinking to the bottom of the pan during baking.)
- In a blender, add eggs and vanilla essence and blend well. Add oil to this and blend again.
- Add powdered sugar ( step 3) and blend again. Then add caramelised sugar ( step 2) and blend it again till well mixed. Transfer to a bowl.
- In a blender, add the jackfruit pieces and blend to a paste. Add this to the egg mixture and mix well.
- Add the flour mixture little by little and fold in gently.
- Then add chopped cashew nuts and mix.
- Transfer the batter into the prepared cake tin and tap for few times. Place some cashew nuts on top.
- Bake in the preheated oven for about 30-40 minutes or until the toothpick inserted in the centre comes out clean.
- Cool for 10 minutes, then turn out onto a wire rack to cool completely... Cut into pieces and serve...
