Ingredients:
4 eggs
15 chakka / ripe jackfruit pieces
1 cup plain flour
6-7 tbsp sugar (adjust to your taste)
3/4 tsp cardamom powder
a pinch of salt
oil, for frying
Preparation:
- ln a blender, add jackfruit pieces and grind well to a smooth puree / paste without adding water and keep it aside.
- In a bowl, add eggs, sugar, cardamom powder and salt and beat well using a whisk.
- Add jackfruit puree into this and mix well.
- Then add plain flour and mix well till you get the flowing consistency, not too thin or too thick.
- Heat oil in a pan on medium flame.
- Transfer the prepared batter to a plastic bag with a hole or a coconut shell with a hole by closing the hole with one finger.
- Bring it over the pan of hot oil, remove the finger and pour it in circular motion.
- Fry on both sides till done and remove from the flame.
- Repeat the same with the remaining batter and serve hot with tea/ coffee...
