Jackfruit Tea Cake

Ingredients:
1 cup jackfruit puree ( 12-15 chakka / ripe jackfruit pieces)
1 2/3 cup plain flour
1 tsp baking powder
1/4 tsp baking soda
a pinch of salt
2 eggs
1 tsp vanilla essence
1/2-3/4 cup sugar, powdered
1/4 tsp cardamom powder
1/4 cup oil
1/4 cup milk
Preparation:
- ln a blender, add jackfruit pieces and grind well to a smooth puree / paste without adding water and keep it aside.
- Preheat the oven to 180 degree celcius. Grease and line a square cake tin with a baking paper.
- In a bowl, add plain flour, baking powder, baking soda and salt and mix well.
- In another large bowl, add eggs, sugar and vanilla essence and mix well using a whisk.
- Add oil, jackfruit puree and cardamom powder and whisk well.
- Then alternatively add the flour mixture and milk, beginning and ending with the flour and mix gently until combined.
- Transfer the batter into the prepared cake tin and bake in the preheated oven for about 40-45 minutes or until the toothpick inserted in the centre comes out clean.
- Cool for 10 minutes, then turn out onto a wire rack to cool completely...Cut into slices and serve...
