Ingredients:


1 cup jackfruit puree ( 12-15 chakka / ripe jackfruit pieces)

1 2/3 cup plain flour

1 tsp baking powder

1/4 tsp baking soda

a pinch of salt

2 eggs

1 tsp vanilla essence

1/2-3/4 cup sugar, powdered

1/4 tsp cardamom powder

1/4 cup oil

1/4 cup milk


Preparation:


  1. ln a blender, add jackfruit pieces and grind well to a smooth puree / paste without adding water and keep it aside.
  2. Preheat the oven to 180 degree celcius. Grease and line a square cake tin with a baking paper.
  3. In a bowl, add plain flour, baking powder, baking soda and salt and mix well.
  4. In another large bowl, add eggs, sugar and vanilla essence and mix well using a whisk.
  5. Add oil, jackfruit puree and cardamom powder and whisk well.
  6. Then alternatively add the flour mixture and milk, beginning and ending with the flour and mix gently until combined.
  7. Transfer the batter into the prepared cake tin and bake in the preheated oven for about 40-45 minutes or until the toothpick inserted in the centre comes out clean.
  8. Cool for 10 minutes, then turn out onto a wire rack to cool completely...Cut into slices and serve...
