Ingredients:


300 gm bird's eye chillies / kanthari mulaku ( white / green )

75 gm tamarind

15-18 garlic cloves, sliced

big piece ginger, sliced

1 1/2-2 tsp kashmiri chilli powder

1 tsp turmeric powder

1 sprig curry leaves

salt to taste

1 tsp asafoetida powder

1 tsp fenugreek seeds, roasted and powdered

1 tsp jaggery

2 tsp mustard seeds

1/4 cup vinegar

1/2 cup sesame oil / gingely oil


Preparation:


  1. Soak tamarind in 1 1/2 cup hot water, extract its juice and keep it aside.
  2. Heat sesame oil in a thick bottomed pan and add bird's eye chillies in batches and saute well for 2-3 minutes at medium flame and keep it aside.
  3. In the same oil, splutter mustard seeds and add sliced garlic and ginger and saute till raw smell goes.
  4. Reduce the flame to low and add kashmiri chilli powder, turmeric powder and curry leaves and mix well.
  5. Add tamarind water and salt and mix well and boil well at medium flame.
  6. Then add bird's eye chillies, mix well and keep at low flame for 3-4 minutes.
  7. Add asafoetida, fenugreek powder and jaggery and mix well.
  8. Add vinegar and mix well. Adjust the salt and switch off the flame.
  9. Allow it to cool completely and store in an air tight glass container/ bottle...
