Ingredients:
300 gm bird's eye chillies / kanthari mulaku ( white / green )
75 gm tamarind
15-18 garlic cloves, sliced
big piece ginger, sliced
1 1/2-2 tsp kashmiri chilli powder
1 tsp turmeric powder
1 sprig curry leaves
salt to taste
1 tsp asafoetida powder
1 tsp fenugreek seeds, roasted and powdered
1 tsp jaggery
2 tsp mustard seeds
1/4 cup vinegar
1/2 cup sesame oil / gingely oil
Preparation:
- Soak tamarind in 1 1/2 cup hot water, extract its juice and keep it aside.
- Heat sesame oil in a thick bottomed pan and add bird's eye chillies in batches and saute well for 2-3 minutes at medium flame and keep it aside.
- In the same oil, splutter mustard seeds and add sliced garlic and ginger and saute till raw smell goes.
- Reduce the flame to low and add kashmiri chilli powder, turmeric powder and curry leaves and mix well.
- Add tamarind water and salt and mix well and boil well at medium flame.
- Then add bird's eye chillies, mix well and keep at low flame for 3-4 minutes.
- Add asafoetida, fenugreek powder and jaggery and mix well.
- Add vinegar and mix well. Adjust the salt and switch off the flame.
- Allow it to cool completely and store in an air tight glass container/ bottle...
